These CBD Chocolate Chip Cookie Bars are divine! I had to make two batches because they were that good. This recipe is infused with CBD by using the Active CBD oil Dark Chocolate. Active CBD oil Dark Chocolate contains 300mg of CBD. The chocolate is also gluten-free and vegan.
You can do this gluten-free recipe two ways! You can fill a 9x13 baking dish or you can make round cookies on a cookie sheet. I found that it is easiest to measure the amount of CBD if you do bars instead of cookies. I will include several variations in this recipe regarding different types of flour as well as a guide to customize how much CBD you want in each bar/cookie. Do keep in mind that the more evenly you cut your bars, the better you will you be able to measure how much CBD is in each.
Ingredients:
3/4 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
1/2 cup of coconut flour
3 large eggs
2 teaspoons vanilla extract
2 teaspoons corn starch
1 teaspoon baking soda
1/2 teaspoon salt
2 Active CBD oil Dark Chocolate Bars, Chopped
Substitutions:
You can substitute 2 cups of all purpose flour or gluten-free all purpose flour for the 1/2 cup of coconut flour. If you use all purpose flour or gluten-free all purpose
flour, only use one egg.

2 Bars of Active CBD oil Chocolate, chopped
18-20mg per bar
1 Bar of Active CBD oil Chocolate, chopped + 1/2 cup of chocolate of choice (dark, milk, semi-sweet)
9-11mg per bar
1/2 Bar of Active CBD oil Chocolate, chopped + 1 cup of chocolate of choice (dark, milk, semi-sweet)
4-6mg per bar
1/4 Bar of Active CBD oil Chocolate, chopped + 1 1/2 cup of chocolate of choice (dark, milk, semi-sweet)
Directions:
Preheat oven to 350 degrees Fahrenheit.
Add the butter to a small saucepan set over medium heat and cook until it melts.
Then, Whisk the butter and continue whisking until golden brown.
Remove the butter from heat and let cool for 5 minutes. Add to a mixing bowl.
Beat the butter with sugar and brown sugar until well combined. Stir in the eggs and vanilla extract.
In another bowl, whisk together the flour, cornstarch, baking soda and salt. Stir into the butter mixture and mix until well combined.
Then, stir in your chopped chocolate. (See chart above)
Press the dough into a greased 9x13 baking dish or form into balls and place on baking sheet. Bake for 18-20 minutes.
