CBD Infused Vegan Dorayaki ♡

Oh have we got something delicious to show you today!

I will be showing you a lovely little recipe to make some tasty little treats known as Dorayaki! Oh, you haven't heard of Dorayaki? That's totally ok! It is a delicious little dessert from the land of the rising sun. Fluffy & soft pancakes filled with Anko (Red Bean Paste) that will rival any pastry. 

 

 Oh did I forget to mention that these tasty treats will be infused with CBD? What better way to start or end the day than with a tasty treat for you and your body.

 

 First things first, we need to infuse our Olive Oil with CBD. Instructions for this method are available here on DiscoverCBD.com and I have also added them below as well. Huge thank you to our wholesale director for making this helpful guide.

 

This is where your CBD will come into play.

For this recipe you will need *

*Pot of water about halfway filled

*A glass measuring cup

*Olive Oil (2oz)

*1 gram Active CBD Oil 99% CBD Isolate Hemp Powder

 

 

1. Put  2 oz of Olive oil in a glass measuring cup. 

2. Now place that glass cup of oil in a pot of water. 


3. Keep the heat low, you want the oil to warm, not boil.


4. Once oil is warm, add 1 gram of CBD isolate into the cup of oil.

5. Stir occasionally until the liquid becomes clear and not cloudy. This should take around 5 minutes.

6. Once liquid is clear, you have an infused oil!

7. Remove from heat and let cool at room temperature.

8.Set oil aside until needed (will be used later in the bean paste recipe) 

 

 

Now that wasn't too bad was it? From here we will now get into making the delicious Anko (Red Bean Paste)

Here are the ingredients needed for the Anko *

 

 * 8 oz  dried Adzuki beans

* Water (As needed for boiling purposes)

* 1/2 cup Sugar

* 1/4 tsp Salt

* 1/4 cup Olive Oil (Which is now CBD infused)

 

 

Got everything together? Alright, now comes the instructions.

1 - Rinse the beans and place in a large bowl. Cover with water and soak overnight (This is the most time consuming part, trust me, it will be worth it)

2 - Drain and place the beans in a pot with 3 cups of water and bring to a boil. Reduce the heat to medium low and simmer the red beans for an hour to two hours until soft, stirring occasionally. If there is still a lot of water in the pot, continue cooking until there is only a thin layer of water covering the beans.

3 - Press the beans and any excess liquid through a fine mesh strainer set over a pot. Toss out the leftover skins,.

4 - Add the sugar, salt, and vegetable oil to the red bean paste and cook over medium low heat, stirring often until the paste thickens.

 

5 - Remove from heat and allow it to cool down.

6 - We are all done with the Anko!

Now comes the part that may seem familiar to us all here Stateside....

The Pancakes!

You'll find all the ingredients that you need listed below

This will make about 4-6 small pancakes 


Ingredients-


*1 Tbsp. lemon juice
*3/4 cup unsweetened vanilla almond milk
*1 cup  Gluten Free All-Purpose flour mix
*2 tsp. baking powder
*1/2 tsp. salt
*1/4 cup organic sugar
*1/4 cup unsweetened applesauce
*1/4 tsp. vanilla extract
*1 Tbsp. unsweetened vanilla coconut yogurt


Now that you have all your ingredients, let's get down to the nitty gritty.


1- In a liquid measuring cup, add 1 Tbsp. of lemon juice. Then, pour in the unsweetened almond milk up to 3/4 cup. Place aside for 5-10 minutes.

2-Sift flour, baking powder, salt, and sugar together into a bowl.


3-Make a well in the dry ingredients, and add applesauce, milk+lemon juice, vanilla extract, and coconut yogurt. Mix until all ingredients are fully combined

4-Heat up a non-stick frying pan over low heat. 


5-Lets get to making some pancakes!

 

6-pour a small amount onto the pan, let it cook until little bubbles start to form on the top and the edges have cooked a bit (roughly 3-4 mins) and then very carefully, with a spatula that you trust, flip that pancake! Let cook for another 3-4 minutes or to your desired consistency and proceed to the next step!

 

7-Lets get these on a plate and get ready to add the bean paste!

8-Just like the Peanut butter & Jelly sandwiches that we all remember, place one pancake down and then scoop a spoonful of bean paste (or more if you want, don't worry, we won't say anything) and then top it with another pancake.

9-We are all done and you can now enjoy!

Want to get fancy? Try using a cookie cutter for some creatively shaped treats, or use a fork and seal the edges, throw it in a Ziploc bag for a snack at work or for later in the day!
